Slow Cooker French Chicken (Coq au Vin)

Cooking time:2.5 – 5 hours
Serves:4 – 6
Ingredients
  • 1kg diced chicken thighs
  • 200g roughly diced streaky bacon
  • 12 whole shallots
  • 200g diced Swiss brown mushrooms
  • 3 diced carrots
  • 500ml red wine
  • 1 tin diced tomatoes (400g)
Method:

Follow these easy steps:-

Heat 1 tsbp of oil in a pan.

Brown chicken, bacon and shallots before adding to a slow cooker with the remaining ingredients, including the contents of this jar rinsed out with the wine. Stir to combine.

Cook on high for 2.5 hours or low for 5 hours.

Serve with mash potato, green beans and crusty bread.
